Ingredients

1 tablespoon olive oil or butter

1 small onion, diced

2 cloves garlic, minced

2 cans black eyed peas, rinsed and drained

Salt and pepper to taste

2 green onions, chopped (for garnish)


Instructions

1. Open and drain the canned black eyed peas. Rinse them well using a colander to remove excess salt and canning liquid.

2. Heat olive oil or butter in a large skillet over medium heat.

3. Add diced onion and sauté for about 4–5 minutes, or until translucent.

4. Stir in the garlic and optional jalapeño or bell pepper. Cook for another minute until fragrant.
