Description

These chewy, golden oatmeal peanut butter chocolate chip bars are packed with wholesome oats, rich peanut butter, and decadent chocolate chips. Perfect as an afternoon snack or quick dessert, this one-bowl recipe is a favorite for its simplicity and irresistible flavor.


Ingredients

1 cup creamy peanut butter

1/2 cup brown sugar (lightly packed)

1/4 cup honey or maple syrup

2 large eggs

1 tsp vanilla extract

1/2 tsp baking soda

1/4 tsp salt

1 1/2 cups old-fashioned rolled oats

1/2 cup flour (all-purpose or whole wheat)

1 cup chocolate chips (semi-sweet or dark)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 inch baking pan with parchment paper or grease lightly.
  2. In a large mixing bowl, mix peanut butter, brown sugar, and honey until smooth.
  3. Add eggs and vanilla extract, stirring until fully combined.
  4. Sprinkle in baking soda and salt. Mix.
  5. Fold in oats and flour until combined.
  6. Stir in chocolate chips, reserving a few to sprinkle on top.
  7. Spread batter evenly into the prepared pan and smooth the top.
  8. Bake for 22–26 minutes or until edges are golden and a toothpick inserted comes out with a few moist crumbs.
  9. Cool for at least 15 minutes before slicing. Let cool completely for clean cuts
