Quick and Simple Savory Steak Gorgonzola Alfredo With Creamy Parmesan Sauce is a luxurious yet approachable dish that brings restaurant-quality flavor into your kitchen. Tender slices of seared steak rest atop silky fettuccine coated in a rich Alfredo sauce made with Gorgonzola and Parmesan, making every bite decadently satisfying.


Ingredients

1 lb ribeye or sirloin steak (room temperature, seasoned)

8 oz fettuccine pasta

2 tbsp olive oil

2 tbsp butter

4 cloves garlic, minced

1½ cups heavy cream

¾ cup grated Parmesan cheese

¼ cup crumbled Gorgonzola cheese

Salt and black pepper, to taste

1 tbsp chopped fresh parsley (for garnish)

Optional: Red pepper flakes


Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Heat olive oil in a skillet over medium-high heat. Pat steak dry, season generously, and sear for 3–4 minutes per side. Let rest under foil for 5–10 minutes, then slice.
  3. In the same skillet, lower the heat and melt butter. Sauté minced garlic for about 1 minute.
  4. Pour in heavy cream and bring to a simmer, scraping up browned bits from the pan.
  5. Stir in Parmesan and Gorgonzola cheese. Cook until melted and slightly thickened. Season with salt and pepper.
  6. Add pasta to the sauce, tossing to coat. Use reserved pasta water if needed for consistency.
  7. Plate pasta, top with sliced steak, and garnish with parsley and optional red pepper flakes.
