Ingredients
1 lb ground beef
1/4 cup soy sauce
2 tbsp brown sugar
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tsp sesame oil
1/2 tsp crushed red pepper flakes or 1 tbsp gochujang
2 cups cooked white rice
1/2 cup cucumber slices
1/2 cup julienned carrots
2 large eggs
2 tbsp chopped green onions
1 tsp sesame seeds
Instructions
1. Heat sesame oil in a large nonstick skillet over medium-high heat. Add garlic and ginger; sauté until fragrant, about 30 seconds.
2. Add ground beef and break apart with a spoon. Cook until browned and fully cooked.
3. Stir in soy sauce, brown sugar, and red pepper or gochujang. Simmer until the sauce thickens slightly and coats the meat.
4. While the beef cooks, prep cucumbers and carrots. Toss with salt and a splash of rice vinegar for a quick pickle.
5. Fry the eggs sunny-side up or as desired in a small pan.
6. To serve, scoop rice into bowls. Top with beef, veggies, and egg. Garnish with green onions and sesame seeds.
Notes
You can swap beef for ground turkey or chicken for a leaner version.
For meal prep, store rice, beef, and toppings separately for easy assembly.
Adjust spice level to taste by increasing or decreasing the gochujang or red pepper.
