Description

Ingredients

6 bone-in, skin-on chicken thighs

1 red bell pepper, sliced

1 yellow onion, sliced

3 cloves garlic, minced

1/2 cup Kalamata olives, pitted

1/2 cup feta cheese, crumbled

1 tablespoon lemon zest

2 tablespoons lemon juice

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons chopped fresh parsley (for garnish)


Instructions

1. Heat olive oil in a large oven-safe skillet over medium-high heat.

2. Season chicken thighs with salt, pepper, paprika, and oregano.

3. Sear chicken skin-side down for 5–6 minutes until golden, flip and cook 2 more minutes. Remove and set aside.

4. In the same skillet, add sliced onions and red bell pepper. Sauté for 4–5 minutes until softened.

5. Stir in minced garlic and cook for 1 minute.

6. Add olives and lemon zest, mix well.

7. Nestle the chicken back into the skillet among the veggies.

8. Pour lemon juice over the top and sprinkle crumbled feta evenly.

9. Bake at 375°F (190°C) for 25–30 minutes, until the chicken is cooked through.

10. Let rest for 5 minutes, garnish with chopped parsley, and serve hot.

Notes

For extra depth, use smoked paprika instead of sweet.

You can substitute boneless chicken thighs, but reduce bake time to avoid drying.

Serve with couscous, rice, or crusty bread for a full Mediterranean experience.
