Description

A fiery, creamy Southwest-inspired pasta with grilled chicken, bell peppers, jalapeños, and a Cajun cream sauce tossed with fettuccine or linguine. Perfect for spice lovers and cozy dinners.


Ingredients

2 chicken breasts

8 oz fettuccine or linguine

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 jalapeño, sliced

2 tsp Cajun seasoning (plus extra to taste)

1 cup heavy cream

1/2 cup Parmesan cheese, grated

3 cloves garlic, minced

2 tbsp olive oil or butter

Salt and pepper, to taste

Fresh parsley, chopped, for garnish


Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper. Sear in skillet with oil or butter until cooked; slice.
  2. Cook pasta in salted water until al dente; reserve 1 cup pasta water, then drain.
  3. Sauté bell peppers, jalapeño, and garlic in skillet until softened.
  4. Reduce heat, add cream, and stir in Parmesan until melted and smooth.
  5. Toss pasta into sauce, add chicken, and combine. Adjust consistency with reserved pasta water if needed.
  6. Serve topped with parsley and extra Parmesan.
