Ingredients
2 chicken breasts
8 oz fettuccine or linguine
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 jalapeño, sliced
2 tsp Cajun seasoning (plus extra to taste)
1 cup heavy cream
1/2 cup Parmesan cheese, grated
3 cloves garlic, minced
2 tbsp olive oil or butter
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Instructions
- Season chicken with Cajun seasoning, salt, and pepper. Sear in skillet with oil or butter until cooked; slice.
 - Cook pasta in salted water until al dente; reserve 1 cup pasta water, then drain.
 - Sauté bell peppers, jalapeño, and garlic in skillet until softened.
 - Reduce heat, add cream, and stir in Parmesan until melted and smooth.
 - Toss pasta into sauce, add chicken, and combine. Adjust consistency with reserved pasta water if needed.
 - Serve topped with parsley and extra Parmesan.
