Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup colorful gumdrops, chopped and floured
¼ cup granulated sugar, for rolling
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Chop gumdrops into small pieces and toss with a little flour to prevent sticking.
3. In a large bowl, cream butter and sugar until light and fluffy.
4. Beat in eggs one at a time, then mix in vanilla extract.
5. In another bowl, whisk together flour, baking powder, and salt.
6. Gradually add dry ingredients to wet, mixing until just combined.
7. Fold in chopped gumdrops using a spatula.
8. Scoop tablespoon-sized dough balls and roll in granulated sugar.
9. Place on baking sheet about 2 inches apart.
10. Bake for 10–12 minutes until edges are lightly golden and tops crackle.
11. Let cool on pan for 3–4 minutes, then transfer to wire racks.
12. Serve or store once completely cooled.
Notes
Lightly oil your knife or scissors when cutting gumdrops to prevent sticking.
Don’t overbake—slightly soft centers keep them chewy.
Roll dough balls generously in sugar for a pretty, crackled finish.
