These crispy Reuben Balls bring all the beloved flavors of a Reuben sandwich into a golden-fried, cheesy, bite-sized snack. Made with corned beef, sauerkraut, Swiss cheese, and a touch of cream cheese, then coated in rye breadcrumbs and paired with a spicy Thousand Island dipping sauce, this recipe is an instant crowd-pleaser for parties, game days, or family snacks.


Ingredients

For the Reuben Balls:

Corned beef, chopped

Sauerkraut, drained and chopped

Swiss cheese, shredded

Cream cheese

Rye breadcrumbs

Egg

Flour

Oil for frying

For the Spicy Thousand Island Sauce:

Mayonnaise

Ketchup

Dijon mustard

Hot sauce

Sweet pickle relish


Instructions

  1. In a bowl, combine corned beef, sauerkraut, Swiss cheese, and cream cheese. Mix until well combined. Chill for 30 minutes.
  2. Roll the mixture into 1-inch balls and place on a tray. Freeze for 15 minutes.
  3. Set up dredging bowls with flour, beaten egg, and rye breadcrumbs. Coat each ball in flour, then egg, then breadcrumbs.
  4. Heat oil to 350°F (175°C) and fry balls in batches for 2-3 minutes until golden. Drain on paper towels.
  5. Mix all sauce ingredients in a small bowl. Chill until serving.
  6. Serve Reuben Balls hot with the dipping sauce.
