Ingredients

2 ½ cups shredded cooked chicken

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 ½ cups shredded cheddar cheese, divided

1 sleeve (about 30) Ritz crackers, crushed

½ cup melted butter

Salt and pepper, to taste

1 tablespoon chopped parsley (optional, for garnish)


Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, and ¾ cup of cheddar cheese. Season with salt and pepper.

3. Spread the chicken mixture evenly into the prepared baking dish. Sprinkle the remaining ¾ cup of cheddar cheese on top.

4. In a separate bowl, mix the crushed Ritz crackers with melted butter until fully coated.

5. Sprinkle the cracker topping evenly over the casserole.

6. Bake uncovered for 30–35 minutes, or until bubbly and golden brown on top.

7. Remove from oven and let rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Notes

For extra creaminess, add a few tablespoons of milk or chicken broth to the filling mixture.
