If you’re looking for the perfect vegetable side dish that blends sweet, savory, and herby flavors—this is it. These Roasted Brown Sugar Carrots with Herbs are easy to prepare, beautifully caramelized, and bring vibrant flavor to your table. Whether you’re hosting a holiday gathering or making a quick weeknight dinner, this easy recipe is ideal for both. Great for fall dinner ideas, quick vegetable sides, or when you need a healthy snack upgrade!

Ingredients

1 lb carrots

2 tablespoons brown sugar

2 tablespoons olive oil

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder (optional)

1 tablespoon chopped fresh parsley or thyme

Instructions

1. Preheat your oven to 400°F (200°C).

2. Peel and trim carrots. Slice thicker carrots in half lengthwise for even roasting.

3. In a large bowl, toss the carrots with olive oil, brown sugar, salt, pepper, and garlic powder if using.

4. Line a rimmed baking sheet with parchment paper or foil. Spread carrots in a single layer.

5. Roast for 25–30 minutes, flipping once halfway, until edges are caramelized and carrots are tender.

6. Sprinkle fresh chopped herbs over hot carrots before serving.

Notes

Don’t overcrowd your pan; this helps the carrots caramelize instead of steam.

You can prep and toss the carrots with glaze up to 4 hours ahead, just roast before serving.

For added flavor depth, try finishing with a drizzle of balsamic glaze.
