Description

Roasted Garlic Cowboy Butter is a bold, savory butter sauce made with roasted garlic, herbs, lemon, and spices. Ingredients

2 bulbs roasted garlic

1 cup unsalted butter

2 tablespoons chopped fresh parsley

1 tablespoon chopped chives or green onion

1 teaspoon crushed red pepper flakes

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

½ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Preheat oven to 400°F and slice the tops off the garlic bulbs.

2. Drizzle bulbs with olive oil, wrap in foil, and roast for 35-40 minutes.

3. Let roasted garlic cool, then squeeze cloves into a bowl.

4. In a small saucepan, melt butter over medium heat.

5. Stir in roasted garlic, parsley, chives, red pepper flakes, mustard, lemon juice, salt, and pepper.

6. Simmer on low for 2-3 minutes to infuse flavors.

7. Blend with immersion blender for smooth texture or leave chunky if preferred.

8. Serve warm or transfer to airtight container for storage.

Notes

For deeper flavor, add a pinch of smoked paprika or cumin while simmering.

Don’t skip the fresh lemon juice—it cuts the richness beautifully.
