Description

Ingredients

2 large sweet potatoes, peeled and cubed

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Peel sweet potatoes and cut them into 1-inch cubes.

3. In a large mixing bowl, toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

4. Spread the cubes on the prepared baking sheet in a single layer, without crowding.

5. Roast for 25-30 minutes, flipping halfway through, until golden and crispy on the edges.

6. Sprinkle with fresh parsley if desired and serve hot.
