Ingredients

2 cups cooked and shredded chicken

1 can (10 oz) Rotel diced tomatoes and green chilies, drained

1/2 cup mayonnaise

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

1/4 cup finely diced bell peppers (optional)


Instructions

  1. Prepare the ingredients – Cook and shred the chicken if you haven’t done so already. Drain the Rotel tomatoes to remove excess liquid. Chop the green onions and bell peppers.
  2. Mix the base – In a large bowl, combine the mayonnaise and sour cream. Stir well until smooth and creamy. Add garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix thoroughly.
  3. Fold in the ingredients – Add the shredded chicken, drained Rotel tomatoes, shredded cheddar cheese, chopped green onions, and diced bell peppers. Gently stir everything together until well combined.
  4. Chill the dip – Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
