Ingredients
½ cup dark molasses
½ cup brown sugar
¼ cup unsalted butter, softened
1 ¼ cups all-purpose flour
2 large eggs
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ cup milk
Instructions
1. Preheat oven to 350°F and generously grease a mini muffin tin.
2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and cloves.
3. In a large bowl, cream butter and brown sugar until fluffy. Add molasses and eggs one at a time, beating well after each.
4. Gradually alternate adding dry mixture and milk into the wet mix until the batter is smooth.
5. Spoon batter into greased muffin cups, filling each about ¾ full.
6. Bake for 15–18 minutes until tops spring back lightly to the touch.
7. Let cool in tin for 10 minutes, then remove and transfer to a wire rack to cool completely.
Notes
For the iconic sticky top, don’t use muffin liners—just grease the pan well.
Mini muffin tins give the best caramelized edges and bite-sized texture.
