Description

This hearty Sausage Breakfast Skillet recipe is a one-pan breakfast wonder packed with crispy potatoes, savory sausage, bell peppers, and melted cheddar cheese. Perfect for weekend brunch or easy weeknight dinners, it’s gluten-free, customizable, and full of comforting flavor.


Ingredients

2 large russet potatoes, diced

1/2 lb breakfast sausage (pork, chicken, or plant-based)

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1 small yellow onion, diced

1 cup shredded cheddar cheese

2 green onions, chopped (for garnish)

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil or butter


Instructions

1. Wash and dice the russet potatoes into small cubes. Dice bell peppers and onion. Chop green onions for garnish and shred the cheese if using block cheddar.

2. In a large cast iron skillet over medium heat, add the sausage and break it up with a wooden spatula. Cook until browned and slightly crispy, then remove and set aside.

3. In the same skillet, heat olive oil or butter. Add diced potatoes and cook until crispy and golden, stirring occasionally. Add in diced onion and bell peppers halfway through cooking.

4. Return sausage to the skillet and combine with the veggies. Sprinkle the cheddar cheese on top. Cover and cook until the cheese melts.

5. Remove from heat. Garnish with chopped green onions and serve hot.

Notes

For extra crispiness, soak the diced potatoes in water for 15 minutes before cooking and dry thoroughly.

You can crack eggs directly over the skillet before covering with cheese if you’d like to add them.

Try using a mix of cheeses like Monterey Jack or Pepper Jack for a different flavor twist.
