23 breakfast sausage links

4 large eggs

½ cup shredded cheddar cheese

4 phyllo or puff pastry sheets (thawed if frozen)

2 tablespoons melted butter

¼ teaspoon salt

¼ teaspoon black pepper


Instructions

1. Cook the sausage links in a skillet over medium heat until browned and fully cooked. Set aside.

2. In a mixing bowl, whisk the eggs with salt and pepper. Scramble gently in a non-stick skillet until just set and fluffy. Do not overcook.

3. If using phyllo dough, layer 3-4 sheets with melted butter between each layer. For puff pastry, use as-is once thawed and cut into rectangles.
