Ingredients
2 cups shredded hashbrowns
1 pound ground breakfast sausage
4 large eggs
1 ½ cups shredded cheddar cheese
½ teaspoon salt
¼ teaspoon black pepper
½ cup diced bell peppers (optional)
¼ cup chopped green onions or parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C) and spray a 12-cup muffin tin with nonstick cooking spray.
2. In a skillet over medium heat, cook the ground sausage until browned. Break it into crumbles as it cooks. Drain and let cool slightly.
3. In a large bowl, combine shredded hashbrowns, cooked sausage, shredded cheddar cheese, and lightly beaten eggs. Add salt and pepper. Mix until well combined.
4. Spoon mixture evenly into muffin cups, pressing gently to pack.
5. Bake for 25–30 minutes or until golden brown and edges are crisp.
6. Let cool for 5 minutes before removing from tin. Garnish with fresh herbs if desired.
7. Serve warm, or let cool completely and store in an airtight container for later.
Notes
Be sure to drain the sausage well to avoid excess grease in the bites.
For crispier bottoms, press the mixture firmly into the muffin cups before baking.
