Ingredients
2 chicken breasts (boneless, skinless)
1 ½ tablespoons Cajun seasoning
2 tablespoons olive oil
8 ounces linguine pasta
2 tablespoons butter
1 cup heavy cream
4 cloves garlic, minced
1 cup Parmesan cheese, freshly grated
1 tablespoon fresh parsley, chopped
Instructions
1. Toss chicken pieces with Cajun seasoning and olive oil.
2. Heat a cast iron skillet over medium-high heat and sear the chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.
3. In a large pot, boil salted water and cook linguine until al dente. Reserve ½ cup of pasta water before draining.
4. In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté for 1–2 minutes.
5. Stir in heavy cream and simmer for 2–3 minutes until slightly thickened.
6. Gradually add Parmesan cheese while stirring until the sauce is smooth.
7. Add pasta and toss until fully coated, using reserved pasta water if needed to thin the sauce.
8. Top with Cajun chicken and garnish with parsley. Serve hot.
Notes
Use freshly grated Parmesan for best melting and flavor.
Adjust Cajun seasoning for spice preference.
Reheat with a splash of cream or milk to revive the sauce.
