Ingredients

1 lb chicken breasts

1 cup mushrooms, sliced

1 cup heavy cream

½ cup Asiago cheese, shredded

3 cloves garlic, minced

½ cup chicken broth

1 tbsp olive oil

1 tbsp butter

½ tsp salt

½ tsp black pepper

1 tsp fresh thyme or parsley (optional)


Instructions

1. Pound chicken breasts to even thickness and season with salt and pepper.

2. Heat olive oil and butter in a skillet over medium-high heat.

3. Sear the chicken for 4–5 minutes per side until golden. Remove and set aside.

4. In the same skillet, sauté mushrooms until browned and moisture is released.

5. Add garlic and cook for 30 seconds until fragrant.

6. Deglaze with chicken broth, scraping up browned bits.

7. Stir in heavy cream and reduce heat to a gentle simmer.

8. Add shredded Asiago cheese and stir until fully melted.

9. Return chicken to the skillet and simmer 5–8 minutes until fully cooked.

10. Garnish with fresh thyme or parsley. Serve warm over pasta, rice, or mashed potatoes.

Notes

Shred the Asiago cheese fresh for best melting results.

Don’t overcrowd the pan when searing chicken; work in batches if needed.
