Ingredients

Shrimp (peeled and deveined)

Avocado

Mango

Tomato

Red Onion

Cilantro

Fresh Lime Juice

Chili Powder

Paprika

Olive Oil

Cooked Rice or Quinoa

Instructions

  1. Marinate Shrimp: In a bowl, whisk together lime juice, olive oil, chili powder, paprika, salt, and pepper. Add shrimp and let marinate for 15 minutes.
  2. Make Mango Salsa: Combine diced mango, tomato, red onion, chopped cilantro, and lime juice. Season with salt and chill.
  3. Cook Shrimp: Grill or sear shrimp on medium-high heat for 2-3 minutes per side until cooked and slightly charred.
  4. Prepare Avocado: Slice avocado just before assembling.
  5. Mix Sauce: Stir together lime juice, olive oil, chili powder, and salt for the lime-chili drizzle.
