Ingredients
2 large chicken breasts
5.2 oz Boursin Garlic & Fine Herbs Cheese
1 cup heavy cream
1⁄2 cup chicken broth
1 tablespoon olive oil
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
1 tablespoon chopped fresh parsley (for garnish)
Instructions
1. Pat the chicken breasts dry and season both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden and nearly cooked through. Transfer to a plate.
3. Lower heat to medium. Pour chicken broth into the skillet and deglaze the pan by scraping up browned bits.
4. Add Boursin cheese and stir until melted. Pour in heavy cream and whisk until the sauce is smooth and creamy.
5. Return the chicken breasts to the skillet. Simmer in the sauce for 5–7 minutes, spooning sauce over the chicken occasionally, until fully cooked and the sauce has slightly thickened.
6. Sprinkle with chopped fresh parsley and serve hot with your favorite side dish.
Notes
For best sear, avoid overcrowding the pan—sear chicken in batches if needed.
Boursin cheese melts best at medium heat—don’t boil it to avoid separating the sauce.
Add a splash more broth or cream when reheating leftovers to revive the sauce’s texture.
