Ingredients

6 medium russet potatoes, peeled and diced

2 cups shredded cheddar cheese (divided)

1 cup sour cream

1 cup milk

4 tablespoons butter

1 small onion, finely chopped (optional)

2 tablespoons all-purpose flour

1 teaspoon garlic powder

Salt and black pepper, to taste

Fresh chives or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Peel and dice potatoes into small cubes.
  2. Boil diced potatoes in salted water for 8–10 minutes until just tender. Drain and set aside.
  3. In a saucepan, melt butter over medium heat. Add chopped onion and cook until translucent.
  4. Stir in flour and cook for 1 minute, forming a roux.
  5. Gradually whisk in milk, then add sour cream, garlic powder, salt, and pepper. Cook until sauce thickens.
