Ingredients

1 batch pie crust dough (homemade or store-bought)

2 cups diced apples (Granny Smith or other tart variety)

2 tablespoons granulated sugar

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1/8 teaspoon nutmeg (optional)

1 tablespoon butter

1 teaspoon cornstarch or flour

Neutral oil for frying (canola or vegetable oil)

Cinnamon sugar (optional, for topping)


Instructions

1. Peel, core, and dice apples. In a saucepan over medium heat, cook apples with sugars, butter, cinnamon, and nutmeg until tender and syrupy. Stir in cornstarch to thicken. Let filling cool completely.

2. Roll out the dough on a floured surface to 1/8-inch thickness. Cut into 4-5 inch circles.

3. Spoon cooled filling into each dough circle. Fold in half and seal edges with a fork.

4. Heat oil in a skillet or Dutch oven to 350°F (175°C).

5. Fry pies in batches for 2-3 minutes per side until golden brown. Remove with slotted spoon.

6. Place pies on cooling rack. Optionally sprinkle with cinnamon sugar while still warm.

7. Serve warm or at room temperature. Store in an airtight container for 2 days, refrigerate for 4 days, or freeze before frying.

Notes

Chill sealed pies before frying to help prevent bursting.

Avoid overfilling to keep edges sealed and intact.

For best texture, reheat in oven instead of microwave.
