Description

This Simple Mexican Beef and Rice Skillet is the ultimate one-pan dinner solution. Packed with seasoned ground beef, fluffy rice, black beans, sweet corn, and fresh vegetables, it’s finished off with a generous sprinkle of melted cheddar cheese and sliced jalapeños. Fast, hearty, and delicious, it’s perfect for busy weeknights or easy meal prep.


Ingredients

1 lb ground beef

1 cup uncooked long grain rice

1 small onion, diced

1 red bell pepper, diced

1 cup frozen corn (or canned, drained)

1 cup canned black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes (with juice)

2 ½ cups beef broth

1 packet taco seasoning (or homemade)

1 cup shredded cheddar cheese

1 fresh jalapeño, sliced (optional)

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste


Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add diced onion and bell pepper. Cook for 3–4 minutes until softened. Stir in taco seasoning.
  3. Add uncooked rice, beef broth, and diced tomatoes. Stir and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is cooked and liquid is absorbed.
  5. Stir in corn and black beans. Simmer uncovered for 2–3 more minutes.
  6. Sprinkle cheese on top. Cover again until cheese melts.
  7. Garnish with jalapeño slices and chopped cilantro. Serve hot.
