Ingredients
4 medium russet potatoes, peeled and grated
1 small onion, finely grated
2 large eggs
1/4 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
Vegetable oil for frying
Sour cream and chopped chives for serving (optional)
Instructions
- Peel and grate the potatoes. Squeeze out excess moisture using a clean towel or cheesecloth.
- Place grated potatoes in a bowl. Grate onion into the bowl as well.
- Add eggs, flour, salt, and pepper. Mix thoroughly until well combined.
- Heat vegetable oil in a skillet over medium heat.
- Form patties from the potato mixture and place them into the hot oil.
- Fry each pancake for 3-4 minutes on each side, until golden brown.
- Transfer to paper towels to drain. Serve hot with sour cream and chives if desired.
