2 pounds Yukon Gold or Russet potatoes
3 tablespoons olive oil

Instructions
1. Preheat oven to 425°F (220°C) and place a large sheet pan inside to heat.
2. Peel the potatoes if desired, then cut into even-sized chunks.
3. Rinse chopped potatoes under cold water to remove excess starch.
