Description

This slow cooker creamy tortellini soup is rich, comforting, and incredibly easy to make. It combines cheesy tortellini, tender vegetables, and a luscious parmesan cream broth for a fuss-free family dinner.


Ingredients

1 (20 oz) package cheese tortellini (refrigerated or frozen)

2 medium carrots, sliced

2 celery stalks, sliced

1 small yellow onion, diced

3 garlic cloves, minced

4 cups vegetable or chicken broth

1 cup heavy cream

3 cups baby spinach

1/2 cup grated parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste


Instructions

  1. Dice onion, slice carrots and celery, and mince garlic.
  2. Add onion, carrots, celery, garlic, Italian seasoning, salt, and pepper to the slow cooker.
  3. Pour in the broth and stir to combine.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Stir in tortellini and baby spinach 30 minutes before serving.
  6. Once tortellini is tender and spinach wilted, stir in heavy cream and parmesan cheese.
  7. Adjust seasoning if needed and serve hot.
