Description

This tropical twist on chicken brings tender, juicy meat slow-cooked in a sweet and savory pineapple-soy glaze. It’s easy to make and perfect for meal prep or a crowd-pleasing family dinner.


Ingredients

2 lbs boneless skinless chicken thighs

1 (20 oz) can pineapple chunks with juice

1/2 cup soy sauce

1/3 cup brown sugar

3 cloves garlic, minced

1 tsp grated fresh ginger

1 red bell pepper, diced (optional)

2 tbsp cornstarch

3 tbsp water (for cornstarch slurry)


Instructions

  1. Place chicken thighs in a single layer in the slow cooker.
  2. In a bowl, whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  3. Pour mixture over chicken. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
  4. Remove chicken, shred with forks. Mix cornstarch and water in a small bowl, stir into sauce.
  5. Return chicken to the pot, add bell peppers if using, and stir.
  6. Cook on HIGH for 20–30 more minutes until sauce thickens.
  7. Serve hot over rice, mashed potatoes, or vegetables. Garnish as desired.
