A flavorful and filling Southern-inspired dish, Slow Cooker Jambalaya is perfect for busy days when you want something comforting and bold. Featuring sausage, chicken, shrimp, and rice all simmered in a spiced tomato broth, it’s a complete meal with minimal effort.
Ingredients
12 oz Andouille sausage, sliced
1 lb chicken breast or thighs, diced
1/2 lb shrimp, peeled and deveined
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, diced
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1 cup long grain rice
2 cups chicken broth
2 tbsp Cajun seasoning
1 bay leaf
1 tsp dried thyme
2 tbsp fresh parsley, chopped
Instructions
- Slice sausage, dice chicken, and chop all vegetables.
- Place peppers, onion, and garlic into the slow cooker.
- Add sausage and chicken on top of the vegetables.
- Pour in diced tomatoes and chicken broth.
- Add Cajun seasoning, thyme, and bay leaf. Stir to combine.
- Cover and cook on low for 4-5 hours.
- Stir in rice 30 minutes before cook time ends.
- Add shrimp 20-30 minutes before serving; cook until pink.
- Remove bay leaf, garnish with parsley, and serve hot.
