Quick to prepare, packed with flavor, and ideal for meal prep, this hearty dish is a family favorite you’ll keep on repeat. Perfect for weeknights or casual gatherings when you want comfort food without the hassle.

Ingredients

1 ½ lbs boneless, skinless chicken breasts or thighs, diced

2 cups cooked rice (white, brown, or preferred type)

1 tbsp olive oil

½ small red onion, finely chopped

2 cloves garlic, minced

1 cup chipotle barbecue sauce

½ tsp smoked paprika

¼ tsp ground cumin

Salt and pepper, to taste

Optional: chopped cilantro or green onions for garnish

Instructions

  1. Dice the chicken into bite-sized chunks and season with smoked paprika, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, add the chopped red onion. Sauté for 2–3 minutes until softened, then add the garlic and stir for 30 seconds.
  4. Return the cooked chicken to the pan and pour in the chipotle BBQ sauce. Stir to coat evenly and let it simmer for 3–5 minutes.
  5. Add the cooked rice to the skillet, pressing it around the chicken. Mix if desired or leave layered.
  6. Cook uncovered for another 2–3 minutes to slightly crisp the rice.
  7. Garnish with chopped cilantro or green onions, if using.
  8. Serve hot and enjoy!
