This bold and smoky one-skillet dinner brings together juicy chunks of chicken glazed in chipotle barbecue sauce over a bed of perfectly cooked rice. Ingredients
1 ½ lbs boneless, skinless chicken breasts or thighs, diced
2 cups cooked rice (white, brown, or preferred type)
1 tbsp olive oil
½ small red onion, finely chopped
2 cloves garlic, minced
1 cup chipotle barbecue sauce
½ tsp smoked paprika
¼ tsp ground cumin
Salt and pepper, to taste
Optional: chopped cilantro or green onions for garnish
Instructions
- Dice the chicken into bite-sized chunks and season with smoked paprika, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add the chopped red onion. Sauté for 2–3 minutes until softened, then add the garlic and stir for 30 seconds.
- Return the cooked chicken to the pan and pour in the chipotle BBQ sauce. Stir to coat evenly and let it simmer for 3–5 minutes.
- Add the cooked rice to the skillet, pressing it around the chicken. Mix if desired or leave layered.
- Cook uncovered for another 2–3 minutes to slightly crisp the rice.
- Garnish with chopped cilantro or green onions, if using.
