Ingredients
1 cup cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup finely chopped onion
3/4 cup buttermilk
1 large egg
Vegetable oil for frying
Instructions
1. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
2. Add finely chopped onion to the dry mix.
3. In a separate bowl, whisk together buttermilk and egg until combined.
4. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix.
5. Heat 2 inches of oil in a deep fryer or heavy-bottomed pot to 350°F.
6. Use a small scoop or spoon to drop tablespoon-sized portions of batter into the hot oil.
7. Fry in batches, turning as needed, for 2–3 minutes or until golden brown.
8. Remove with a slotted spoon and drain on a paper towel-lined plate.
9. Serve hot with your favorite dipping sauce.
Notes
For extra flavor, mix in chopped jalapeños, shredded cheese, or cooked bacon before frying.
Always use a thermometer to keep the oil at 350°F to avoid greasy results.
If you’re serving a crowd, keep hush puppies warm in a 200°F oven until ready to serve.
