Ingredients

1 cup medium-grind yellow cornmeal

1/2 cup all-purpose flour

1 tbsp baking powder

1/2 tsp salt

2 tbsp honey

4 tbsp melted butter (plus more for brushing)

1 cup buttermilk

2 large eggs

1/3 cup diced red bell pepper

1/3 cup diced green bell pepper

1 small jalapeño, minced (optional)

2 tbsp chopped fresh parsley (for garnish)

Vegetable oil or butter (for frying)


Instructions

  1. In a large bowl, combine cornmeal, flour, baking powder, and salt.
  2. In another bowl, whisk together buttermilk, eggs, melted butter, and honey.
  3. Mix wet ingredients into dry ingredients until just combined.
  4. Fold in diced bell peppers and jalapeño. Let batter rest 5-10 minutes.
  5. Heat a cast-iron skillet over medium with oil or butter.
  6. Drop spoonfuls of batter into skillet. Fry 2-3 minutes per side until golden.
  7. Remove and drain on paper towels.
  8. Brush with honey butter and garnish with parsley. Serve warm.
