Description

This Spicy Cajun Chicken Rigatoni in Creamy Mozzarella Alfredo recipe combines tender Cajun-seasoned chicken, rich mozzarella Alfredo sauce, and perfectly cooked rigatoni for a bold, comforting dinner. Ideal for weeknights or guests, this creamy pasta dish delivers smoky heat and cheesy indulgence all in one bite.

Ingredients

2 large chicken breasts

2 tablespoons Cajun seasoning

12 ounces rigatoni pasta

2 tablespoons olive oil

3 tablespoons butter

3 cloves garlic, minced

1 ½ cups heavy cream

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper, to taste

1 tablespoon chopped fresh parsley (optional)

Instructions

1. Season chicken breasts with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium heat and sear chicken for 5–6 minutes on each side until golden and cooked through. Remove and let rest.

3. Cook rigatoni in salted boiling water until al dente. Drain and set aside.

4. In the same skillet, melt butter over medium-low heat. Add garlic and sauté for 30 seconds.

5. Add heavy cream and bring to a gentle simmer. Gradually whisk in mozzarella and Parmesan cheese until smooth and creamy. Season with salt and pepper.

6. Stir cooked rigatoni into the sauce and let simmer for 1–2 minutes.

7. Slice chicken and place on top of the pasta. Garnish with parsley and serve hot.

Notes

Let the chicken rest before slicing to keep it juicy and tender.

Whisk the Alfredo sauce continuously to avoid cheese clumping.

Use freshly grated cheeses for the smoothest, richest texture.
