Ingredients
1 lb chicken thighs or breasts, boneless and skinless
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1/2 tsp red pepper flakes
4 garlic cloves, minced
2 tbsp unsalted butter
1 tbsp olive oil
12 oz linguine pasta
1 1/4 cup heavy cream
4 oz cream cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup shredded fontina cheese
1/4 cup shredded asiago cheese
2 tbsp chopped fresh parsley
Instructions
1. Season the chicken with salt, pepper, smoked paprika, and red pepper flakes.
2. In a skillet over medium heat, melt butter with olive oil. Add garlic and sauté until fragrant.
3. Add chicken and sear until golden brown and cooked through. Remove and set aside.
4. Bring a pot of salted water to a boil and cook linguine until al dente. Drain and reserve 1/2 cup pasta water.
5. In the same skillet, add heavy cream and cream cheese over low heat. Stir until smooth.
6. Add Parmesan, mozzarella, fontina, and asiago cheese gradually, whisking until melted and creamy. Season with salt and pepper to taste.
7. Add drained linguine to the sauce and toss until fully coated. Use pasta water to loosen if needed.
8. Slice the cooked chicken and serve over the cheesy linguine. Garnish with parsley and extra red pepper flakes.
Notes
Use freshly grated cheese for the smoothest melt and best flavor.
Don’t overcook the pasta; it should be al dente to hold up under the rich sauce.
Let the chicken rest a few minutes before slicing to retain its juices.
