Ingredients

1 lb chicken breast fillets

1 cup buttermilk

2 tablespoons hot sauce

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil for frying

4 brioche buns

8 dill pickle slices

1 cup fresh lettuce or greens

1/2 cup mayonnaise

1/2 teaspoon smoked paprika

1/2 teaspoon chili powder

1 tablespoon lemon juice

Pinch of salt


Instructions

1. Combine buttermilk and hot sauce in a bowl. Submerge chicken fillets and refrigerate for at least 1 hour or overnight.

2. Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper in a bowl. Dredge marinated chicken in the mix, pressing to coat well.

3. Heat vegetable oil in a skillet to 350°F (175°C). Fry chicken for 4–5 minutes per side until golden and internal temperature reaches 165°F. Drain on a wire rack.

4. In a separate bowl, whisk together mayonnaise, smoked paprika, chili powder, lemon juice, and salt until creamy.

5. Butter and toast brioche buns in a skillet until golden.

6. Assemble the sandwich: spread sauce on buns, add lettuce, chicken, pickles, and top with more sauce. Serve hot.

Notes

Rest the breaded chicken for 5–10 minutes before frying to help the coating stick.
