Ingredients
2 chicken breasts or thighs
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon red pepper flakes (adjust to taste)
12 ounces cheese-filled tortellini
3 tablespoons butter
1 cup heavy cream
1 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
1. Season chicken with salt, pepper, and red pepper flakes.
2. Heat olive oil in a large skillet over medium heat, sear chicken on both sides until golden and cooked through. Remove and set aside.
3. In a pot, cook tortellini according to package instructions until al dente. Reserve 1/2 cup pasta water and drain the rest.
4. In a medium saucepan, melt butter over low heat. Add minced garlic and sauté until fragrant.
5. Stir in heavy cream, whisking constantly to avoid scorching.
6. Gradually add Parmesan cheese, whisk until melted and sauce thickens. Adjust with reserved pasta water if needed.
7. Slice chicken and add tortellini to the sauce, tossing to coat evenly.
8. Arrange chicken on top or mix in. Garnish with parsley and extra red pepper flakes if desired.
Notes
Use freshly grated Parmesan for the creamiest sauce.
Let chicken rest before slicing to keep it juicy.
Adjust spice level by increasing or decreasing red pepper flakes.
