Ingredients
1 ½ pounds boneless skinless chicken thighs or breasts, cut into cubes
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon red chili flakes
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
½ cup grated parmesan cheese
2 tablespoons chopped fresh parsley
2 tablespoons melted butter

Instructions
1. In a large bowl, combine olive oil, minced garlic, chili flakes, smoked paprika, salt, and pepper.
2. Add the chicken pieces and toss to coat well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for deeper flavor).
3. Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 30 minutes beforehand.
4. Thread the marinated chicken onto skewers evenly.
5. Place the skewers on the grill and cook for about 10–12 minutes, turning occasionally until the chicken is fully cooked and lightly charred.
6. In the last few minutes, brush the skewers with melted butter and sprinkle parmesan cheese over the top. Let it melt slightly and crisp.
7. Remove from grill, sprinkle with fresh parsley, and serve hot.
Notes
Marinate longer for juicier, more flavorful chicken.
For extra crispy edges, finish under a broiler for 2 minutes.
Use freshly grated parmesan for best melting and texture.
