Ingredients
1 lb ground beef
2 cups cooked white rice
3 tablespoons soy sauce
3 cloves garlic, minced
1 zucchini, sliced
1 red bell pepper, sliced
1 cup broccoli florets
1/2 cup sliced mushrooms
2 green onions, chopped
1 tablespoon chili paste (or 1 tsp red pepper flakes)
1 teaspoon sesame oil
Instructions
1. Heat a large skillet or wok over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
2. Stir in minced garlic and cook for 1 minute. Add soy sauce, chili paste, and sesame oil. Simmer for 3–5 minutes.
3. In the same skillet or separately, stir-fry zucchini, red bell pepper, broccoli, and mushrooms until just tender, about 4–5 minutes.
4. Return beef to the skillet and toss with vegetables until evenly coated and heated through. Adjust spice to taste.
5. Serve over freshly cooked white rice. Garnish with chopped green onions. Enjoy hot.
Notes
Don’t overcook the veggies—keep a slight crunch for texture.
You can swap ground beef for ground turkey or tofu for variation.
Cook rice ahead of time to save prep minutes during busy nights.
