Ingredients
200g salmon fillets
2 tablespoons honey
1 tablespoon sriracha
1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon rice vinegar or lime juice
2 cups cauliflower florets
2 cups cooked white rice
2 tablespoons mayonnaise
1 teaspoon sriracha (for drizzle)
2 tablespoons chopped scallions or cilantro
Instructions
1. In a bowl, whisk together honey, sriracha, soy sauce, minced garlic, and rice vinegar or lime juice.
2. Toss cauliflower florets with olive oil, salt, and pepper. Roast at 425°F (220°C) for 20-25 minutes until golden.
3. Cut salmon into bite-sized cubes. Sear in a non-stick skillet over medium-high heat for 2-3 minutes per side. Add glaze and cook 1-2 more minutes until coated.
4. Assemble bowls with rice, roasted cauliflower, and glazed salmon.
5. Mix mayonnaise with sriracha, drizzle over bowls, and garnish with scallions or cilantro.
Notes
For less heat, reduce sriracha in both glaze and drizzle.
Swap cauliflower with broccoli or Brussels sprouts for variety.
For extra crunch, top with toasted sesame seeds or crushed peanuts.
