Ingredients
1 lb flank or skirt steak
1 cup cherry tomatoes
1 cup fresh mozzarella balls
1/2 cup fresh basil leaves
1/2 cup balsamic vinegar
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon cracked black pepper
Instructions
1. Pour balsamic vinegar into a small saucepan and bring to a gentle simmer. Reduce until thickened and syrupy, about 10-12 minutes. Stir occasionally, then set aside to cool.
2. Pat the steak dry. Season with salt and cracked pepper. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 3–4 minutes per side. Rest for 5–10 minutes, then slice thinly.
3. Halve the cherry tomatoes. Toss with a bit of olive oil and salt. Gather mozzarella balls and basil leaves.
4. Arrange sliced steak on a platter. Top with tomatoes, mozzarella, and basil. Drizzle balsamic glaze generously over the top.
