Description

This Steak Grilled Cheese recipe is packed with juicy ribeye steak, caramelized onions, and melty provolone cheese between crispy, buttery bread. Perfect for a hearty lunch or dinner, this cheesy steak sandwich is a comforting twist on a classic favorite. Ideal for quick meals, skillet recipes, and grilled cheese lovers.

Ingredients

1 medium yellow onion

1 tablespoon butter (for onions)

1 ribeye or sirloin steak (about 8 oz)

Salt and pepper to taste

4 slices provolone or mozzarella cheese

4 slices thick-cut bread (like sourdough or Texas toast)

2 tablespoons butter (for grilling)

Instructions

1. Slice the onion thinly and cook in 1 tablespoon butter over medium heat for 15-20 minutes, stirring occasionally, until golden and caramelized.

2. Season the steak with salt and pepper. Sear in a hot skillet to your preferred doneness. Let rest, then slice thinly against the grain.

3. Lay out the bread slices. On two of them, layer cheese, then steak, caramelized onions, and more cheese. Top with the remaining slices.

4. Butter the outside of each slice of bread. Heat a skillet over medium heat and grill the sandwiches until golden and crisp, flipping once.

5. Remove from heat, slice in half, and serve hot while the cheese is gooey.

Notes

Thinly slice steak for easier biting and better texture.

Use freshly grated cheese if possible for faster, even melting.

Toast the sandwich low and slow to prevent burning before the cheese melts.
