Ingredients
1 cup rolled oats
3/4 cup milk
1/2 cup Greek yogurt
2 oz cream cheese, softened
1 tbsp maple syrup
1/2 tsp vanilla extract
1 tbsp chia seeds
3/4 cup fresh strawberries, chopped
2 tbsp crushed graham crackers
2 tbsp whipped cream, optional for topping
2 tbsp extra chopped strawberries, optional for topping
Instructions
1. In a medium bowl, whisk together the softened cream cheese, Greek yogurt, milk, maple syrup, and vanilla extract until smooth and creamy.
2. Stir in the rolled oats and chia seeds until everything is evenly combined.
3. Fold in half of the chopped strawberries, saving the rest for layering and topping.
4. Spoon part of the oat mixture into jars or airtight containers, add a layer of chopped strawberries, then top with the remaining oat mixture.
5. Cover and refrigerate for at least 6 hours or overnight.
6. Before serving, top with extra strawberries, crushed graham crackers, and whipped cream if desired.
Notes
Softened cream cheese blends much more easily and gives the oats a smoother cheesecake texture.
Add the graham cracker crumbs just before serving so they stay slightly crisp.
If the oats are thicker than you like in the morning, stir in a splash of milk before eating.
