A refreshing and creamy dessert perfect for summer gatherings, the Strawberry Cheesecake Poke Cake blends moist vanilla cake with a sweet strawberry gelatin soak, topped with a luscious cheesecake layer and glazed fresh strawberries. Ingredients

1 box yellow or vanilla cake mix (plus ingredients called for on the box)

1 package (3 oz) strawberry gelatin

1 cup boiling water

1/2 cup cold water

8 oz cream cheese, softened

1 tub (8 oz) whipped topping (like Cool Whip)

2 cups fresh strawberries, sliced

1/2 cup strawberry glaze or jam

White chocolate shavings (optional)


Instructions

  1. Prepare and bake the cake mix in a 9×13-inch pan according to package directions. Let cool for 15 minutes.
  2. Use the handle of a wooden spoon to poke holes all over the cake.
  3. In a bowl, dissolve strawberry gelatin in 1 cup boiling water, then stir in 1/2 cup cold water. Pour the mixture evenly over the cake.
  4. Refrigerate the cake for 1 hour.
  5. In a mixing bowl, beat softened cream cheese until smooth. Fold in whipped topping.
  6. Spread the cheesecake mixture evenly over the chilled cake.
  7. Toss sliced strawberries with strawberry glaze or jam until coated. Spoon over the cheesecake layer.
  8. Garnish with white chocolate shavings if using. Refrigerate for at least 2 more hours before serving.
