Ingredients
1 box yellow or vanilla cake mix (plus ingredients called for on the box)
1 package (3 oz) strawberry gelatin
1 cup boiling water
1/2 cup cold water
8 oz cream cheese, softened
1 tub (8 oz) whipped topping (like Cool Whip)
2 cups fresh strawberries, sliced
1/2 cup strawberry glaze or jam
White chocolate shavings (optional)
Instructions
- Prepare and bake the cake mix in a 9×13-inch pan according to package directions. Let cool for 15 minutes.
- Use the handle of a wooden spoon to poke holes all over the cake.
- In a bowl, dissolve strawberry gelatin in 1 cup boiling water, then stir in 1/2 cup cold water. Pour the mixture evenly over the cake.
- Refrigerate the cake for 1 hour.
- In a mixing bowl, beat softened cream cheese until smooth. Fold in whipped topping.
- Spread the cheesecake mixture evenly over the chilled cake.
- Toss sliced strawberries with strawberry glaze or jam until coated. Spoon over the cheesecake layer.
- Garnish with white chocolate shavings if using. Refrigerate for at least 2 more hours before serving.
