Ingredients
3/4 cup vanilla protein powder
4 oz cream cheese (softened)
1/2 cup almond flour
1/2 cup freeze-dried strawberries (crushed)
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
1/4 cup graham cracker crumbs (optional, for rolling)
Instructions
1. In a large mixing bowl, combine softened cream cheese, vanilla protein powder, almond flour, honey (or maple syrup), and vanilla extract.
2. Stir until the mixture becomes smooth and dough-like.
3. Gently fold in crushed freeze-dried strawberries.
4. Scoop out small portions and roll into 1-inch balls using your hands or a cookie scoop.
5. (Optional) Roll each ball in graham cracker crumbs or a mix of almond flour and strawberry powder for a cheesecake crust touch.
6. Place on a tray and refrigerate for 20 minutes until firm.
7. Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
Notes
For best texture, use full-fat cream cheese and let it soften before mixing.
If using unsweetened protein powder, you may want to add an extra teaspoon of sweetener.
