Description

These Strawberry Shortcake Brownies are the ultimate dessert mashup, featuring a fudgy brownie base, creamy cheesecake layer, fluffy strawberry topping, and a buttery shortcake crumble. Ingredients

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

8 ounces cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 packet (3 oz) strawberry gelatin mix

2 tablespoons hot water

1/2 cup heavy whipping cream, whipped

2 tablespoons cream cheese (optional)

10 golden sandwich cookies

1 tablespoon strawberry gelatin powder

1/2 cup whipped cream

Fresh strawberries, sliced


Instructions

1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. Melt the butter, then mix in granulated sugar until smooth. Add eggs and vanilla, stirring until combined. Mix in cocoa powder and flour until just combined. Spread batter into the pan and bake for 20–25 minutes. Let it cool completely.

2. Beat softened cream cheese with powdered sugar and vanilla extract until creamy. Spread over the cooled brownie base.

3. Dissolve the strawberry gelatin in hot water and let it cool. Fold into whipped cream (and cream cheese if using) until pink and fluffy. Gently spread over the cream cheese layer.

4. Crush golden sandwich cookies with strawberry gelatin powder until crumbly. Sprinkle over the strawberry layer.

5. Refrigerate the pan for at least 2 hours. Before serving, top each square with a dollop of whipped cream and a fresh strawberry slice.

Notes

For clean layers, chill between each step and use an offset spatula to spread evenly.

Use a hot, dry knife for neat slicing. Wipe between each cut.

For a crunchier crumble, toast the cookie crumbs briefly before adding.
