Description

These Strawberry Velvet Cheesecake Truffle Bites are a dreamy no-bake dessert made with strawberry cake, cream cheese, and white chocolate. Perfect for holidays, parties, or gifting, they bring the flavor of strawberry cheesecake in bite-sized, freezer-friendly form. A must-try for cheesecake dessert lovers and truffle enthusiasts!


Ingredients

2 cups crumbled strawberry cake

4 oz cream cheese, softened

1 ½ cups white chocolate chips or melting wafers

¼ cup red candy melts or a few drops of red food coloring gel (optional)

2 tbsp freeze-dried strawberry crumbs (optional)


Instructions

1. Bake or crumble the strawberry cake until it forms fine crumbs. Let cool completely if freshly baked.

2. In a large bowl, combine cake crumbs with softened cream cheese. Mix until it becomes a thick, smooth dough.

3. Scoop 1-tablespoon portions and roll into balls. Place on a parchment-lined baking sheet and freeze for 15–20 minutes.

4. Melt white chocolate in a microwave-safe bowl or using a double boiler, stirring until smooth.

5. Dip each truffle into the melted chocolate using a fork or dipping tool. Tap off excess and place back on parchment.

6. While the coating is wet, drizzle with melted red candy melts or colored chocolate. Sprinkle with freeze-dried strawberry crumbs if using.

7. Let truffles set completely at room temperature or chill briefly until firm.

Notes

For best results, use full-fat block-style cream cheese, not whipped or spreadable versions.

If the chocolate is too thick for dipping, thin it with a small amount of coconut oil.

These freeze beautifully! Store in a zip-top freezer bag for up to 2 months.
