Description

These juicy, golden Stuffed Cornish Game Hens are roasted to perfection with garlic herb butter and a savory homemade stuffing. Ingredients

2 Cornish game hens

4 tablespoons butter (softened)

3 cloves garlic (minced)

1 tablespoon fresh thyme (chopped)

1 tablespoon fresh rosemary (chopped)

2 tablespoons fresh parsley (chopped)

1 lemon (sliced)

1 cup onion (chopped)

1 cup celery (chopped)

3 cups bread cubes (stale or toasted)

1 cup chicken broth

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Melt 1 tablespoon of butter in a skillet. Add chopped onion and celery. Sauté until soft.

2. Add minced garlic and cook for 1 more minute until fragrant.

3. Stir in the bread cubes, chopped herbs, and enough chicken broth to moisten the stuffing. Season with salt and pepper. Let cool slightly.

4. Preheat the oven to 375°F (190°C). Rinse the hens and pat dry. Remove giblets if present.

5. Fill each hen’s cavity with the cooled stuffing. Don’t overfill. Tie the legs together with kitchen twine.

6. Mix softened butter with garlic and remaining herbs. Rub all over hens, under the skin if possible. Add lemon slices under the skin or inside the cavity.

7. Place hens on a rack in a roasting pan. Roast for 50–60 minutes, basting occasionally.

8. Hens are done when the thickest part of the thigh reads 165°F (74°C).

9. Rest hens, covered loosely with foil, for 10 minutes before serving.

Notes

Use a thermometer to avoid overcooking – aim for 165°F in the thigh.

Don’t overstuff the hens. Leave room for the stuffing to expand as it cooks.

For crispier skin, broil for the last 2–3 minutes but keep an eye on them!
