Ingredients
1 tablespoon olive oil or butter
8 ounces cremini or baby bella mushrooms, chopped
3 cloves garlic, minced
2 cups fresh spinach
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded mozzarella cheese, divided
1/2 cup grated parmesan cheese, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Heat olive oil or butter in a cast iron skillet over medium heat. Add mushrooms and sauté until browned, about 5–6 minutes.
2. Add garlic and cook until fragrant, about 1 minute.
3. Stir in spinach and cook until wilted.
4. In a mixing bowl, combine cream cheese, sour cream, 1/2 cup mozzarella, and 1/4 cup parmesan. Add salt and pepper, then mix in the sautéed mushroom-spinach mixture.
5. Return mixture to the skillet and spread evenly. Top with remaining mozzarella and parmesan.
6. Bake at 375°F for 20 minutes until bubbly and golden.
7. Serve hot with toasted baguette slices, crackers, or veggies.
Notes
Let the mixture cool slightly before serving so it thickens for easier scooping.
For added flavor, stir in a splash of white wine during the mushroom sauté.
