Ingredients
1.5 lbs chicken thighs or breasts, boneless and skinless
3 tablespoons cornstarch
3 tablespoons soy sauce
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon red chili flakes or 2 red chilies, sliced
1 tablespoon lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon sesame seeds
2 tablespoons vegetable oil
Instructions
1. Toss chicken pieces in cornstarch and a pinch of salt. Let them rest while preparing the sauce.
2. In a small bowl, whisk together soy sauce, honey, garlic, ginger, chili flakes (or sliced chilies), and lime juice.
3. Heat oil in a non-stick skillet or wok over medium-high heat. Cook chicken until golden and fully cooked, about 4–5 minutes per side.
4. Pour the sauce into the pan with the chicken. Let it simmer for 2–3 minutes until slightly thickened and glossy.
5. Garnish with cilantro, sesame seeds, and more chilies if desired. Serve hot over rice or noodles with lime wedges.
Notes
Adjust spice by reducing or increasing the chili flakes or fresh chilies to taste.
For extra crispy chicken, avoid crowding the pan and cook in batches if needed.
This dish is best served immediately to preserve the crispy texture of the chicken.
