Ingredients

12 sheets phyllo dough, thawed

6 tablespoons unsalted butter, melted

1 cup chopped pecans

1 cup brown sugar

1/2 cup heavy cream

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.

2. Cut phyllo dough into squares to fit muffin cups. Layer 5–6 sheets per cup, brushing melted butter between each layer.

3. Bake phyllo cups for 10–12 minutes until golden and crisp. Let cool.

4. In a small saucepan, combine brown sugar and heavy cream. Stir over medium heat until bubbling and thickened (5–7 mins).

5. Remove from heat. Stir in vanilla extract and salt.

6. Fill each phyllo cup 3/4 full with caramel sauce.

7. Top each with chopped pecans.

8. (Optional) Return to oven for 5 more minutes to toast the topping.

9. Let cool slightly before serving.

Notes

Keep phyllo dough covered with a damp towel while working to prevent it from drying out.

Toasting the pecans before adding them enhances their flavor.

If the caramel thickens too much, gently reheat it over low heat before filling the cups.
